A chili recipe approved by a doc

A team of Prisma Health providers recently participated in the “So You Think You Can Cook Chili Cook-Off,” a fundraiser for the S.C. School for the Deaf and the Blind.

Troy Beavers, MD, a pediatrician at Pediatric Associates–Spartanburg, developed the recipe for the team’s green chili, which could be a winner if you’re still developing the menu for your Super Bowl party.

Chili makes a good meal— it’s filled with vegetables, protein, fiber and good doses of healthy spices, which can assist in your overall health. Garlic helps the immune system and it can lower cholesterol and reduce inflammation. Chili powder has vitamins A and C, as well as minerals.

Here’s the recipe:

Cook time: 3 hours

Total time: 3 hours, 20 mins

Serves: 8


  • 2 lbs. pork loin, cut into small cubes
  • 1 lb. chicken breasts
  • 19-oz. can of white beans
  • 1½ cups chopped sweet onion
  • 1 28-oz. can mild diced green chiles or 3½ cups chopped peeled roasted mild or medium green chiles
  • 2 14.5-oz cans chicken broth
  • ½ cup Herdez Tomatillo Verde (OK to substitute any salsa verde, just make sure first ingredient is tomatillo)


  • 2 tsp. garlic powder
  • 2 tbsp. cumin
  • 1 1/2 tbsp. red chili powder
  • 1 tsp. jalapeno powder
  • 1 tsp. salt (adjust to taste)


  • 4-oz. can whole green chiles, pureed (or puree ½ cup peeled roasted green chiles)
  • 2 tsp. cumin
  • 1 tsp. jalapeno powder
  • 2 tbsp. Tabasco Green Pepper Sauce (if desired, to taste)


  1. In 5-quart pot, brown the pork, then add the onion and chicken broth.
  2. Add the ½ cup Tomatillo Verde and the 3½ cups green chiles. If desired, transfer to crockpot at this point. Simmer for 1 hour. Add water or chicken broth as needed to keep meat covered.
  3. Add spice mix and simmer for another hour.
  4. Add the remaining four ingredients and cook for another hour, adjusting thickness with chicken broth or water.
  5. Add the cooked chicken and beans in the last hour. Chicken should be shredded.
  6. During the last 10 minutes, add heat, if desired, using Tabasco Green Pepper Sauce. Add salt to taste.
